A Mocktail Recipe

In the latest episode of the Ampéritif Podcast, listeners were introduced to a unique cocktail named “Heavenly Vista,” inspired by Amanda Lauer’s acclaimed Heaven Intended series. This delightful drink not only tantalizes the taste buds but also pays homage to the historical and romantic elements of Amanda’s novels set during the Civil War.

Inspiration Behind the Cocktail

The creation of the “Heavenly Vista” cocktail draws from the historical backdrop of Amanda’s series. During the Civil War era, tea was a common beverage, often enjoyed for its comforting and soothing qualities amidst the turbulent times. Taking this historical detail as a starting point, the cocktail incorporates rooibos tea bags, adding a touch of authenticity and depth to the flavor profile.

Recipe

Heavenly Vista
INGREDIENTS
  • 1/2 Pineapple cut in chunks
  • 1 tsp vanilla extract
  • Peel of 1 lemon
  • Juice of 1 lemon
  • 5 Cloves
  • 3 Tablespoons sugar (adjusted according to your taste)
  • 4 Rooibos teabags (Ceylon or English breakfast tea will also work)
  • 1L boiling water

 

*PINEAPPLE WHIPPING CREAM
  • Pineapple chunks set aside from punch infusion
  • 300ml whipping cream of double cream
  • 3 tsp sugar
 
TOOLS
  • 1x jigger
  • 1x knife
  • 1x mixed (electric)
  • 1x highball glass
METHOD

After boiling the water in a saucepan, add the teabags and all the other ingredients. Remove the teabags after 5 minutes but let the rest of the ingredients there until the water is cool. If you’re using Rooibos tea you can infuse it for up to 15min. Strain the solids out, make sure you’re happy with the sweetness level and bottle. Keep the pineapple chunks for the next step!

Blend the pineapple chunks in a blender until they have a smooth consistency. Whip the cream and the sugar until semi-stiff. Add 4 tablespoons of the blended pineapples to the whipped cream and whip some more until all incorporated. You can use the rest of the blended pineapples to make a jam (by cooking with more sugar), in a cake or as a cocktail ingredient 🙂

Heart-shaped sprinkles, Pineapple slice or chunk, Lemon slice or peel, or a mint spring.
